Taste of Tuesday : Soup Swap

My friend and I are doing a soup swap this week.  Ever done one??  Well after a weekend of total indulgence over the 4th, we thought we would detox for a few days with some soups to get ready for another weekend of debauchery coming up this weekend for the Blue Angels.  They fly over Pensacola Beach this weekend and it's always quite the party.  So...in anticipation of being in our swimsuits all weekend long and eating more bad food and drinking way too many calories, we are detoxing.  

Here's what I made:



I made this soup last fall and it was so delicious!!  It's from cooking light and low-cal but it tastes so rich.  You can find the recipe via that link.  

Broccoli Soup

This is an old recipe my Mom made a long time ago and I remember really liking.  I have to admit that I kind of winged this one and it doesn't taste near as good as I remember, but it's the most healthy.  

2 bunches broccoli (stems cut)
3 cups low sodium chicken broth
2 cloves garlic
1 onion (quartered)
Salt and Pepper totaste

Put all ingredients in the blender and blend.  

You get the most nutrients from the broccoli when it's raw and even though I made it this way, I think my Mom used to boil the broccoli and cooked the garlic and onion before she blended it all.  Oh well, I will still enjoy it!!

Calories: 60 • Fat: 1 g • Protein: 3.5 g • Carb: 10 g • Fiber: 3 g • Sugar: 4 g

Ingredients:
1/2 small onion, quartered
2 cloves garlic
3 medium zucchini, skin on cut in large chunks
32 oz reduced sodium Swanson chicken broth (or vegetable)
2 tbsp reduced fat sour cream
kosher salt and black pepper to taste
fresh grated parmesan cheese if desired for topping (optional)

Directions: 

Combine chicken broth, onion, garlic and zucchini in a large pot over medium heat and bring to a boil. Lower heat, cover, and simmer until tender, about 20 minutes. Remove from heat and purée with an immersion blender, add the sour cream and purée again until smooth.

Taste for salt and pepper and adjust to taste. Serve hot.

  4. These sound so good! I don't know why I have been craving soups recently... Which doesn't make sense bc it's been so warm out. But, there is something so comforting and filling about a nice bowl of soup! I will have to try these recipes!

  5. I am in need of some serious detoxing after this past weekend! I pretty much ate/drank everything that was in sight. The cream of zucchini sounds delicious! Good luck this week!
