Taste of Tuesday : Mexi-Corn Dip + OOTD

This has always been one of my favorite dips for anytime of the year.  I love it in the summer for pool parties or get togethers and I love it during football season for game day tailgates!! 

It's super easy and always a hit amongst our friends. I made it this weekend since we had guests coming over!  She's the one who gave me this recipe too and got me addicted!  It's always been a favorite of ours, so I knew I had to make it. 


Mexi Corn Dip
2 cans Mexicorn (drained)
1 can Rotel (drained)
3-4 Green Onions chopped
2 cups shredded cheddar cheese
1/2 cup mayonnaise
1/2 sour cream

Mix all the ingredients together and serve with Frito Scoops!  The longer the dip sits in the fridge, the better it gets.  So if you can make it a day ahead of the party, you won't be disappointed.


And since it's Taste of Tuesday, I thought I'd share one of our favorite local restaurants that we had a quick date night at last night.  It's a small house in downtown Pensacola called Dharma Blue.  If you are ever down here, you need to make sure to check it out!  They have a great menu, but my favorite is always the sushi!!



We were home early from dinner and the babe was down, so we enjoyed some time on the back porch which is our favorite thing to do lately!

  4. That dip looks really good! I'm a huge fan of corn these days, like I crave it for dinner and on salads etc. Didn't even know there such a thing a Mexi-corn sold in the can. Will have to look for it!
