Taste of Tuesday : Crab Cakes + Peach Cobbler

Last week I shared that I had my sister-in-law and her sister over for a fun dinner while the men were out of town.  I made them my go-to, favorite recipe to cook for guests and I promised that I would share it with all of you.  

 The only down-side with this recipe is that fresh, jump-lump crabmeat has gotten SOOO expensive.  Right now it is about $26 a pound where I live.  One pound makes about 5 large crab cakes which I think is enough for about 3 people.  So I would save it for special occasions!  


Fresh Jumbo Lump Cakes

1lb jumbo lump crabmeat
1 bunch green onions, chopped
1/2 large red bell pepper, in small dice (optional)
1 finely chopped jalapeƱo (optional)
2/3 cup mayonnaise 
1/3 cup creole mustard
1 tsp Creole Seasoning
2 tbsp butter
1 lemon
1 packet Old Bay Crab Cake Classic Mix

Place crabmeat in collinder and squeeze lemon juice over top.  Sprinkle creole seasoning over crabmeat.  Mix crabmeat with onions, pepper, mayonnaise, mustard and Old Bay Seasoning mix.  Mold crabmeat into palm size cakes and into rings shown below for best results!  Refrigerate for a few hours if possible.  It helps the crab cakes stay molded together.  Melt butter in a skillet and cook crab cakes until brown on both sides.  Leave the rings on for cooking.  


I served our crab cakes over spring mix with some cherry tomatoes, fresh corn, and roasted butternut squash that I had in the fridge.  It turned out so delicious!! 


The final product! 

For dessert I served this simple Peach Cobbler with vanilla ice cream.  We get fresh peaches right down the street from where we live and I jumped over there for the first batch they were out selling!! I love homemade peach cobbler.  


Peach Cobbler

Peel and cut into bite size 2 cups of peaches
put 1/2 stick of butter into a bread loaf pan
Turn oven to 350 degrees
Put pan into oven so butter melts
Mix into a batter:
1 cup milk
1 cup sugar
1 cup bisquick
1 tbsp vanilla extract
Take pan out of oven 
Pour batter into pan
DO NOT STIR
Bake 1 hour at 350 degrees

++ Any fruit can be used for this recipe.  1/2 peaches and 1/2 blueberries is really good too!!++

  2. Thanks for the recipe :) and it's getting expensive here too! We used to make crab cakes all of the time, but now that crab meat has gone up in price it's more of a treat for us. Yours look delicious, I'm going to try your recipe the next time we make them!!

  10. Yum crab and cobbler sound delicious! Love summertime for all the amazing fruit they have! We just got our first pair of Freshly Picked moccs yesterday but I was trying to be good so I ordered a size 3. Now I am bummed how long it will take for her to wear them!
