Taste of Tuesday | Breakfast, Lunch & Dinner

I'm changing things up for Taste of Tuesday today and sharing some snapshots of a few meals I've had over the last couple of weeks.  I used to read some fun food blogs more than I do now.  Not the type of food blogs that just share delicious recipes each day, but the food bloggers that share exactly what they eat for every meal, every day.  That seems like it might be pretty boring, but I actually really enjoyed it.  They made for a good skim read and gave me some new ideas on good, healthy foods to eat.  If you're curious, two of them that I read were {Kath Eats Real Food & Carrots N' Cake}.

I had planned to pick a few days and photograph each meal, but honestly, these are more of a hodgepodge of meals over a couple week period.  I wasn't very good at photographing each meal.  Maybe I'll do that one if you guys like seeing this...

Breakfast is typically a little crazy.  I'm trying to keep a starving toddler at bay in his highchair while preparing a decent meal.  I usually throw a few cheerios on his highchair while I begin to prep.  Sometimes Matt starts with some yogurt for him too.

Here's a few meals we've had recently:
I love to have two scrambled cheese eggs for breakfast because it always seems to hold me over the best, but that doesn't always happen when we are trying to rush out the door to spin class or school for Brody.   Some days Chick-fil-a Chicken Biscuits are in order and that's typically when I've had to much wine the night before from a Mom's Night Out happy hour! Brody loves french toast and I also make these great protein pancakes that I wish I had photographed.  All you do is scramble one egg with a mashed banana.  Pour it into a small frying pan that is well greased and cook it like a pancake.  Top with honey, syrup or peanut butter.  Oatmeal is always a good go-to as well because Brody and I both love it.


For lunch, I'm usually eating whatever we have leftover or sometimes I've made something earlier in the week to eat off of like that caprese cous cous.  I enjoy a good turkey sandwich and I love having our leftovers on top of a nice salad.  I'm ready for some cooler temperatures so that I'm more inspired to cook some great soups.  I adore soup for lunch.  


You guys see a lot of our dinners via Instagram or on my weekly Taste of Tuesdays.  The Prociutto and Peas Pasta is one recipe I haven't shared with you guys because honestly, I didn't love it.  The sauce is made with gorgonzola cheese and it's really just too strong for me.  The fried proscuitto on the other hand was AMAZING.  Have you ever pan-fried procuitto before?  It's better than bacon.  Mouth-watering good.  Anyway, I also ate mine over zucchini noodles instead of regular pasta.  I thought they were good and definitely want to try them again with a different kind of sauce.  That sauce was just too strong and rich.  You guys have seen the rest of these recipes: Pan Fried Fish.   2. I'm really impressed with your breakfasts. Mine would consist of pictures of a granola bar one morning and then cereal the next. And I totally laughed out loud with your comment about a Chick-fil-A biscuit after too much wine. I wish there was a Chick on my way to work sometimes for that same reason!

  4. All of your meals sound so good! i do like to see what other people make. If I photographed all my meals it would be a lot of fast food, eating out, ice cream and donuts :/ Trying to be better about cooking!

  5. Love this twist on Taste of Tuesday! I'm really boring with my breakfast and dinner... it's almost always cereal and then a sandwich/leftovers haha. Going to give the caprese cous cous a try though... two of my favorite foods!

  7. Crazy question. What type of bread do you use for the french toast? I know most french toast is made with a white bread but I don't buy that kind. I typically buy Natures Own Honey Wheat. Thanks!

  8. I've got to try the lobster corn cakes and chicken biscuits are my weakness!! I suck at photographing meals. Probably bc I use my iphone camera!

  9. I love these types of posts! I find that my breakfasts are usually the same....2 eggs and avocado or greek yogurt parfait, and I plan out dinners for the week, but lunches REALLY throw me for a loop. That flank steak salad looks right up my alley!

  11. I love this post! I love seeing what people eat because I don't have time to sit down with a cookbook and plan out all of my meals (especially lunch and breakfast). I got so much good inspiration from this! Please keep them coming!

  18. I love this idea because I love seeing what other people eat for breakfast and lunch! I usually have eggs every morning,it's the only thing that fills me up enough so I don't pig out all day
