So I never got around to posting our weekend yesterday mainly because I really didn't have much to share. We had a nice weekend at home not doing a ton, but I still should have had more than 2 pictures to show for it. We went out with some friends on Friday night and joined them for a little after-work party downtown and then hit up a few bars and dinner before heading home. Saturday was extremely uneventful (except we finally started the Netflix series, House of Cards, and we love it) and then Sunday we planned a fish fry with my brother and sister-in-law which was the perfect end to the weekend. My brother caught a ton of fish last week and they wanted to cook it up. So we put Matt on the frier and threw in fish, oysters, shrimp, onion rings and french fries. Oh and I made some garlic cheese grits and chinese coleslaw. Can you say healthy????? It was cute indulgent, but oh so yummy!
I did get to wear this super cute skirt which I wouldn't mind having in a few more colors and I had to snap a photo of this awesome vase and flower bouquet at the party we went to. Does anyone know what those purple flowers shaped like a ball are called??
Anywho, I shared a photo of these flat bread pizzas last week and told you I would share them today. I'm pretty sure that I'm late to the "Naan Bandwagon", but I am so glad that I finally tried them out. They are so easy and they made for a delicious homemade pizza.
Honestly, I never make homemade pizza because it's our go-to lazy meal to order in; but I got the itch and it was so worth it! Once I started, I got to thinking how much fun it would be to have a pizza making party with tons of different gourmet toppings already prepped for your guest. Has any one done that before???
BBQ RIB PIZZA
Rib Meat pulled off the bone and tossed in BBQ Sauce (we had some ribs leftover so I used that but of course chicken would be perfect too)
Grilled Onions
Grilled Corn cut off the cobb
Fresh Mozzarella Cheese
Brush Naan bread with BBQ Sauce leaving about a 1/2 inch on the outside for a crust. Layer grilled onions, rib meat, corn and fresh mozzarella on top. Brush outside crust with a oil/garlic mixture. Bake at 350 for about 12 minutes or until cheese is bubbling.
VEGETARIAN
Grilled Onions
Grilled Zucchini
Grilled Corn (cut off the cobb)
Sliced Tomato
Fresh Basil
Fresh Mozzarella
Brush the entire pizza with garlic olive oil. Layer grilled onions, zucchini, corn then sliced tomatoes. Slice Mozzarella on top and finish with a little fresh basil. Bake at 350 for 12 minutes or until cheese in bubbling.
You can see I actually made this one half vegetarian and half sausage with grilled onions and corn. Both were really good!
I will definitely make these Naan pizzas again and try some other variations. It was so much fun to clean out my refrigerator to come up with each of these.
