Taste of Tuesday : Healthy Chickpea Chicken Chop Salad

I made this salad about a month ago and have kept forgetting to share it with all of you.  It's so fresh and easy as I used a rotisserie chicken from the store and had the rest of the ingredients in the fridge already.  I did grill my corn which made it extra yummy and I used a regular balsamic dressing that I make instead of the BBQ dressing.

Healthy Chickpea Chicken Chop Salad


  • 2 large romaine hearts, washed and chopped
  • 1 cup pulled cooked chicken breast
  • 1 (15.5 oz) can chickpeas, rinsed and drained
  • 1 cup grape tomatoes, sliced in half
  • 3/4 cup sweet corn (I grilled mine)
  • 1/4 cup crumbled goat cheese
  • 1/3 cup cilantro, washed and chopped
  • 1 small avocado, diced
  • 1/2 cup BBQ dressing, if desired
  1. In a large bowl add lettuce, top with all ingredients except for avocado and BBQ dressing. Toss salad gently.
  2. Place into cold salad bowls. Garnish with diced avocado and drizzle with BBQ dressing if desired. Serve with low-fat corn tortilla strips.

  8. This looks delicious! I'm all about salads in the summer and try to use rotisserie chicken when the recipe calls for chicken (easier and cheaper than making it myself!).
